Potato–apple–soup
for 3-4 persons:
500g potatoes
1-2 apples
1 carrot
1 onion
1 tsp sugar
400 ml apple juices
700 ml vegetable stock
salt, pepper, chilli,
crème fraiche
Peel and cut in pieces the vegetables. Melt some butter in a big pot and add the onion, then the apples and carrots and at last the suggar. When it’s caramelized add the potatoes and the apple juices and the vagetables stock. Cook it about 20-30 minutes until the potatoes are finished. Blend the soup and season it with salt, pepper, chilli and creme fraiche.
